Eggplant Dip.
Ingredients:
- 2 eggplants
- ½ tsp salt
- Good quality egg mayonnaise to taste
Instructions:
- Bake eggplants in a moderate oven for an hour or until well done. Scoop out insides and allow to cool.
- Drain excess liquid.
- Mash eggplant with fork adding mayonnaise and salt.
